Alas, my first post after 7 years


MY CREAMY BUTTER CHICKEN
A/Marinate (the longer the merrier)
4 chicken thigh boneless skinless cut cube
1tsp salt
1/2Tbsp sugar
½ tsp curry powder
½ tsp pepper
3Tbsp corn flour
3Tbsp flour
2 eggs
B/
4Tbsp butter
1Tbsp olive oil
1 sprig curry leaves
10 cili padis or cili merah/hijau or less
21/2Tbsp sugar
1-2tsp salt
1 can evaporated milk
Perap A around 30 minutes, the longer the better. Deep fry chicken. Set aside.
Heat up pan, meltkan butter n oil. Tumis cili padi dan daun kari hingga naik bau on slow fire. Add in sugar, kacau jap and tuang evaporated milk. Bring to a boil and add in ayam tadi. Masak till gravy a little thick. Done.
NOTE
Can ganti dgn fresh milk but tak lemak
Can add whip cream sikit dalam ¼ cup
Can lesskan cilis or add lagi
Can also add in 2 slices of lemon
Can use any ayam parts
Can substitute dgn fish or udang or crabs
Can be eaten with rice or pasta

The other day while I was looking for my high protein flour, I came across lots (and I really mean lots) of balance ingredients from last year's Raya. So, I decided to make muesli bars out of those ingredient before expiry come acalling....

Nutty Muesli Bar

A/

100gm butter

50gm brown sugar

250ml honey

B/

150gm wholemeal flour

1tsp baking powder

200gm rolled oats

100gm sunflower seeds

100gm pumpkin seed

100gm sesame seeds

100gm walnuts/almonds or any nuts

100gm rice puffs (I combined with cocoa puffs)

100gm dried cranberry

100gm golden raisins

100gm Hawaiian coconut flakes

½ tsp salt

Melt butter on low flame, add in brown sugar and stir till sugar dissolved. Stir in honey and bring to boil. Remove and let cool slightly.

Combine B ingredients in a large bowl, stir thoroughly. Slowly pour in butter-sugar-honey mixture.

Mix until well combined. (I used hand gloves)

Take a 10 x 10 x 2 in tray and lined with aluminium foil. Transfer mixture into tray and press to compact.

Bake at 170C around 40-50 minutes or until brown. The temperature depends on your oven. Once baked, remove from oven and press again for a firmer layer.

Let it cool and cut into bars.


I did three recipes, one with dried fruits and two without as my children doesn't really take them...this is the one with fruits

Did this last Friday during the school break...

DOUGHNUTS

A/
300gm high protein flour
2Tb milk powder
3Tb icing sugar
1 egg yolk
40gm butter

B/Mix and stand aside around 5-10 minutes (until fermented)
200ml lukewarm water
1Tb instant yeast
1tsp sugar

Place A into bowl using dough blade. Slowly pour yeast mixture thru feed tube till dough is formed and clings away from wall.
Take out and put into bowl. Cover and proof for 15 minutes.
Once proved, roll out dough and use dough cutter to cut, repeat.
Proof again for 30 minutes.
Deep fry donuts until golden brown but if you are to freeze it, just fry for a short while, take out drain, let cool and keep in an airtight container in the freezer.

FROSTING

A/Cinnamon Glaze- mix together
1 cup caster sugar
2 tsp cinnamon powder

B/Glaze Icing
90gm soft butter
1 1/2 - 2 cups icing sugar
1 1/2 tsp vanilla essence
1/4 cup water

Melt butter, beat in icing sugar and vanilla until combined.
Stir in water, spoonful by spoonful until you get the consistency u want.
